The Lottie: Sausage, Kale & Potato Soup
Warm, hearty, and bursting with flavor, this creamy potato, sausage, and kale soup is the ultimate comfort in a bowl!

- 1 whole1 whole1 whole Onion, Chopped
- 1 whole1 whole1 whole Garlic, microplaned
- 2 lb2 lb2 lb Yukon Gold Potatoes
- 4 cups4 cups4 cups Chicken Stock
- 1 bunch1 bunch1 bunch Baby Kale, cleaned & destemmed
- 1 Tbsp1 Tbsp1 Tbsp Paprika
- 1 tsp1 tsp1 tsp Cayenne Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a stock pot, over medium-high heat, drizzle oil and sear slices of pork sausage until one side is caramelized. Remove and set aside.
- Lower heat to medium and add onion. Saute until tender. Microplane in garlic cloves and season with salt.
- Add diced potatoes & another pinch of salt.
- Pour in chicken stock until it just covers the potatoes. Bring to a boil, then reduce the heat to simmer. Cook until the potatoes are soft.
- Add in heavy cream, paprika and cayenne pepper (and optional cheese if you’d. Reduce heat and let it simmer for 5–8 minutes to thicken.
- Using a blender or immersion blender, blend half potatoes to create a more creamy consistency.
- Add the cooked sausage and kale to the pot.
- Adjust seasoning and enjoy!
