who doesn't love coming home from a long day of work with dinner already made for you? the crockpot truly is MVP of winter. this soup is a twist on the classic marry me chicken (which is popping off everywhere) & a good ole bowl of chili. sprinkle some parm crisps & croutons on top & your taste buds will be thanking you for the hard work you put in (:

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first saute peppers, onions, & mushrooms in a skillet (or instant pot) for 8-10 minutes.
  2. add kale to veggies; cook until wilted.
  3. transfer cooked veggies to a slow cooker (or keep in the instant pot), then add in all ingredients except the cottage cheese & parmesan.
  4. cook on high for 3-4 hours or low for 6-8 hours OR until the chicken is cooked through (if using whole chicken breast, shred right before cooking).
  5. with ~20-30 minutes left in cooking time, mix in cottage cheese & parmesan cheese.
  6. serve with any toppings of choice.
