  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
  2. Heat olive oil in a medium-sized pan over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add garlic and mushrooms and cook for another few minutes until softened.
  3. For the sauce: add tofu, dairy-free milk, Dijon mustard, nutritional yeast, and dried thyme to a blender or food processor and blend until smooth. Gradually Season with salt and pepper.
  4. In a large bowl, combine the Palmini noodles, tuna, peas, mushrooms (if using), and the sauce. Mix until everything is evenly coated.
  5. Transfer the mixture to the prepared casserole dish and spread it out evenly. Top with gluten-free breadcrumbs
  6. Bake in the oven for 20-25 minutes, or until the top is golden and the casserole is bubbling.
  7. Let cool for 5 minutes before serving.
