GF/DF Tuna Noodle Casserole
This Tuna noodle casserole if for anyone looking for a lighter option from the traditional casserole that's gluten free, dairy free and low carb and high in protein!
Ingredients
- 4 cups4 cups4 cups Hearts of Palm Spaghetti
- 2 whole2 whole2 whole Canned Tuna, 2 cans
- 1 cup1 cup1 cup Green Peas
- 1 cup1 cup1 cup Yellow Onion, diced
- 1 cup1 cup1 cup Baby Bella Mushrooms, sliced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Olive Oil
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 cup1 cup1 cup Italian Nut Crumbs, or gluten free bread crumb
- .5 cup.5 cup.5 cup Almond Milk
- 1 whole1 whole1 whole Silken Tofu, whole package
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- .25 cup.25 cup.25 cup Nutritional Yeast
- 1 tsp1 tsp1 tsp dried Thyme
- 1 pinch1 pinch1 pinch Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
- Heat olive oil in a medium-sized pan over medium heat. Add the diced onion and sauté until softened, about 3-4 minutes. Add garlic and mushrooms and cook for another few minutes until softened.
- For the sauce: add tofu, dairy-free milk, Dijon mustard, nutritional yeast, and dried thyme to a blender or food processor and blend until smooth. Gradually Season with salt and pepper.
- In a large bowl, combine the Palmini noodles, tuna, peas, mushrooms (if using), and the sauce. Mix until everything is evenly coated.
- Transfer the mixture to the prepared casserole dish and spread it out evenly. Top with gluten-free breadcrumbs
- Bake in the oven for 20-25 minutes, or until the top is golden and the casserole is bubbling.
- Let cool for 5 minutes before serving.
