  1. Preheat oven to 350°F and lightly grease a mini loaf pan
  2. Combine eggs, cottage cheese, and vanilla extract in a food processor
  3. Process until smooth
  4. Pour into a medium-sized bowl and add oat flour, sugar, protein powder, cinnamon, carrots, walnuts, and baking powder
  5. Spoon batter evenly between mini loaf molds
  6. Bake for 15 to 17 minutes or until a knife comes out clean
  7. Allow to cool and enjoy!
