This giant pop tart is so fun! The dough is made with greek yogurt to add more protein and the filling is made with a chia seed jam to add more fiber. I hope you love it!

  1. For the Chia Jam:
  2. In a large pot, combine frozen raspberries, maple syrup, chia seeds, and a pinch of salt
  3. Bring to a boil, then reduce heat and let simmer for about 10 minutes, stirring occasionally, until thickened
  4. Mash the remaining raspberries with a potato masher
  5. Transfer to a container and refrigerate until cooled
  6. For the Dough:
  7. Preheat the oven to 350°F (175°C)
  8. In a mixing bowl, whisk together flour, sea salt, and baking powder
  9. Add Greek yogurt and gently mix until a dough forms—avoid overmixing
  10. Transfer the dough to a floured surface, shape it into a ball, and cut it in half
  11. Roll each half into a thin rectangular sheet
  12. Assembling the Pop Tart:
  13. Place one sheet of dough onto a lined baking sheet
  14. Spread ¼ to ⅓ cup of the chia jam evenly over the dough, leaving a ¼-inch border around the edges
  15. Lay the second sheet of dough over the top, then press down around the edges with a fork to seal
  16. Bake for 20-22 minutes, or until golden brown
  17. For the Frosting:
  18. Mix Greek yogurt with powdered sugar until smooth
  19. Once the pop tart has cooled slightly, spread the frosting evenly over the top
  20. Sprinkle with crushed dehydrated raspberries or sprinkles for a fun finishing touch
