Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Roasted Garlic Aioli:
- Preheat the oven to 400F. Take a whole head of garlic, using a sharp knife, cut 1/4 inch of the top so that inner cloves are exposed.
- Place the garlic bulb onto a square piece of foil. Drizzle with olive oil and a light sprinkling of salt.
- Pull the sides of the foil up and around the garlic so that you make a little parcel. Place the parcel directly onto the oven rack and roast for 45-60 minutes.
- Squeeze garlic cloves out into a mason jar or deep bowl. Add rest of aioli ingredients and blend with an immersian blender or use a small blender. Refrigerate until ready to use.
- Tuna Patties:
- Using a medium sized bowl, add tuna and break it up with a fork. Add chopped onion, parsley, mayo, hot sauce, lemon juice, and salt.
- Place whisked egg, crushed cornflakes, and flour mixed with salt in separate bowls.
- Form tuna into patties, I use a large cookie scoop. Use your hands to bind patty together. Dip in flour, then egg, and then into the cornflakes. Make sure to bind patty together after each dip so patty does not fall apart.
- Fry on stovetop with avocado oil and serve with brioche buns, lettuce, tomato, pickles, and roasted garlic aioli.
