Shamrock Matcha cookie dough cups
Matcha and shamrocks go hand in hand in my opinion! These are high in protein low in sugar and such a simple sweet treat to have on hand!
Ingredients

- .25 cup.25 cup.25 cup Coconut Flour

- 2 Tbsp2 Tbsp2 Tbsp Matcha Collagen Peptides Powder - Further Food

- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter

- 1 tsp1 tsp1 tsp Vanilla Extract

- In a bowl, mix almond flour, coconut flour, and matcha. Stir in maple syrup, nut butter, vanilla, until a dough forms.
- In a microwave-safe bowl, melt dark chocolate and coconut oil in 20-second increments, stirring until smooth.
- Pour a spoonful of melted chocolate into the each shamrock mold until halfway filled.
- Place a small amount of cookie dough into the middle of the shamrocks.
- Add remaining melted chocolate, ensuring the top is fully covered.
- Refrigerate for 30 minutes until firm.
- Enjoy! Store in the fridge for up to a week or freeze for longer.
