asian beef & veggie skillet
this is my take on the classic beef & broccoli, but loaded with extra veggies, flavor, & is easy peasy to throw together. best part is, it requires ONE dish. perfect to throw together for a dinner or have as an easy meal prep for the week.
Ingredients

- 10 - 12 oz10 - 12 oz10 - 12 oz Broccoli, frozen, pre-cut

- 10 - 12 oz10 - 12 oz10 - 12 oz Sweet Potato, frozen, pre-cut
- 10 - 12 oz10 - 12 oz10 - 12 oz Bell Pepper and Onion Blend, Frozen, frozen, pre-cut
- 5 oz5 oz5 oz Water Chestnuts, sliced & drained
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Sesame Seeds, for garnishing
sauce
- 4 Tbsp4 Tbsp4 Tbsp Coconut Aminos
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Arrowroot Flour, mixed in a little water
- 1 Tbsp1 Tbsp1 Tbsp White Miso Paste

- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar

- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 0.25 cup0.25 cup0.25 cup Cilantro, finely chopped
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground

- 0.25 tsp0.25 tsp0.25 tsp Gochugaru (Korean Chili Pepper Flakes)

- 0.25 - 0.5 cup0.25 - 0.5 cup0.25 - 0.5 cup Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- to a large skillet, brown ground beef.
- once beef is browned, drain excess grease, then transfer beef to a plate.
- add frozen peppers & onions to the skillet first & cook for 3-5 minutes.
- add in broccoli & sweet potatoes; cook for another 8-10 minutes.
- add ground beef & water chestnuts back to skillet.
- whisk together all sauce ingredients, then add to skillet & simmer for 8-10 minutes.
- garnish with sesame seeds & enjoy.
