My family loves a good healthy skillet meal. This dish has a punch of flavor with a Korean twist. Our son is Korean and he has always loved spice and heat, but don’t worry this dish isn’t hot - just flavorful.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a small pot cook the rice in water according to package instructions.
  2. In a skillet cook the ground turkey in 1 Tbsp oil on medium heat. Break up meat as it cooks through. About 7 minutes.
  3. Add 1 tbsp oil and carrots, bell pepper, cauliflower, onion, and garlic. Stir and let cook 5 minutes.
  4. Add remaining ingredients. Stir until everything is combined. Turn heat to medium-low and let cook 5-7 minutes until soft and flavor is incorporated.
  5. Spoon up rice into bowls, top with turkey/vegetable misture.
  6. Top with scallions if desired.

Notes

You can use ground pork or chicken for this dish as well, both are tasty.
