Ingredients
- 1 cup1 cup1 cup Coconut Milk Yogurt, I like So Delicious unsweetened vanilla coconut yogurt, or non-dairy yogurt of choice
- 0.25 cup0.25 cup0.25 cup Chocolate Protein Powder, or 1 serving (see notes)
- 1 Tbsp1 Tbsp1 Tbsp Cocoa Powder, use Dutch processed for an extra rich flavor

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Pure Maple Syrup, or liquid sweetener of choice, start with less and adjust to taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients in a medium bowl and stir until completely smooth with no clumps of protein powder. Taste and adjust the sweetness with more maple syrup if desired.
- Serve immediately, or place in the fridge for an hour to chill and slightly thicken.
- Enjoy as is, or add toppings like coconut whipped cream, raspberries, and chocolate shavings.
Notes
- Protein powder: Most protein powder serving sizes are roughly 1/4 cup; this will be 1-2 scoops depending on the brand. You can also use vanilla protein powder—just add an additional tablespoon of cocoa powder to make the pudding more chocolatey. My favorite plant-based protein powders for this recipe are Ora Organic and Macro Mike.
- I find the texture of the pudding to be just right, but if yours is too thick, you may want to add a splash of non-dairy milk to the mixture.
-
Storage: If you have leftover pudding or are prepping it for later, store in an airtight container in the fridge for up to 3 days.
