Maple Apple Cinnamon & Pecan Gluten Free Loaf (Edit recipe)

Cozy weather is slowly approaching and this means I'm getting creative in the kitchen with warm flavours. I was so happy to put together this gluten free loaf for my family to switch things up. It's low in sugar and perfect heated up the following morning with a cup of coffee.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F
  2. Spray a loaf pan with avocado oil (or any cooking oil you please)
  3. Wash, peel, and dice up your apple, set aside
  4. Chop your pecans and set aside
  5. In a large bowl mix together; nut butter, maple syrup, eggs, milk, and vanilla until combined
  6. To that same large bowl add in; gluten free flour, baking powder, baking soda, cinnamon, nutmeg, and salt, combine once again
  7. Mixture should be quite thick, do not over mix
  8. Fold into the batter your diced apples and pecans
  9. Pour mixture into loaf pan
  10. Top off with whole pecans and turbinado sugar for garnish if desired
  11. Bake for 40 to 45 min until a toothpick comes out dry
  12. Allow to cool on counter for at least 15min
  13. Slice and enjoy!

Notes

Serve warm or at room temp! Best stored in the fridge for future use.
