Peanut Butter Cookie Dough Energy Balls
These peanut butter cookie dough energy balls are made with 7 simple ingredients, and come together in just minutes! The texture is soft, chewy and tastes a whole lot like raw peanut butter cookie dough! Perfect for on the go snacking or a healthy sweet treat!
Ingredients
- 1 cup1 cup1 cup Oats, Rolled

- 1 cup1 cup1 cup Medjool Dates, pitted

- 1/3 cup1/3 cup1/3 cup Peanut Butter

- 2 Tbsp2 Tbsp2 Tbsp Flax Seed, Whole, (ground)
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup

- 1 tsp1 tsp1 tsp Hemp Protein Powder - Nutiva, or any protein powder (optional)
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp Water
- 2 Tbsp2 Tbsp2 Tbsp Semi-Sweet Chocolate Chips, mini

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add oats, flaxseed and protein powder to a high speed food processor. Blend into a coarse flour.
- Add in dates, peanut butter and maple syrup. Blend until a doughy texture forms, scraping down sides occasionally. Add ~1-2tbsp water as needed to blend. Mixture should stick together when pressed between fingers.
- Fold in chocolate chips by hand.
- Form into 16 balls. Store in the fridge or freezer for best texture!
