Paleo Gingerbread Cookies (Edit recipe)

I heard it was national cookie day today soo what better way to celebrate than these paleo GINGERBREAD cookies!! They're soft and CHEWY, warmly spiced and literally have that melt in your mouth texture. Fair warning.. they didn’t last us a full day over here soo you might want to whip up a double (or triple) batch!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350F and line a baking sheet with parchment paper
  2. In a medium bowl, combine wet ingredients
  3. Add in dry ingredients
  4. Refrigerate dough at least 30mins to chill
  5. While dough is chilling, mix coating ingredients in a small bowl
  6. Form dough into 1inch balls and roll each in the cinnamon sugar coating. Place onto baking sheet and lightly flatten with your hand
  7. Bake for 10-12mins until cookies start to crack at the top (don’t overbake!)
  8. Let cool completely before devouring
