Super Easy Apple Coffee Cake
If ever you're in a rush & need a cake to be whipped out of the oven in under an hour, this is your saving grace recipe. My go-to fall apple coffee cake.
Ingredients
Icing
- 2 cups2 cups2 cups Powdered Sugar
- 4 Tbsp4 Tbsp4 Tbsp Whole Milk
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
Cake
- 2 whole2 whole2 whole Dried Apples, diced
- 1.5 tsp1.5 tsp1.5 tsp Ground Cinnamon
- 1.5 cup1.5 cup1.5 cup Brown Sugar
- 1 cup1 cup1 cup Sour Cream
- 0.75 cup0.75 cup0.75 cup Vegetable Oil
- 4 whole4 whole4 whole Eggs
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 whole1 whole1 whole Yellow Cake Mix

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add diced apples to a medium-sized bowl and cover with cinnamon & brown sugar; set aside.
- In another bowl, add your eggs, sour cream, vanilla, and oil; mix well
- Once mixed, add in your cake mix and mix it again
- Fold in your apples and pour the batter into your tray
- Bake at 350 for 30-35min; once baked, work on your icing and set aside your cake
- For icing; combine all ingredients and pour over the cake (warm or cold)
Notes
I usually store my cake in the fridge, as leaving it out on the counter makes it soggy. Sprinkling cinnamon on top of the icing just before serving is a beautiful touch too! Please use a 9 x 13 oven-safe & greased pan for this cake recipe.
