- Place the chicken thighs on a lined baking sheet. Sprinkle with ground mustard, onion powder, paprika, salt and pepper, seasoning both sides generously.
- Transfer the seasoned chicken to a large bowl. Add the honey and about ½ cup of BBQ sauce. Toss until every piece is evenly coated.
- Optional, but recommended: Cover and refrigerate for at least 30 minutes or up to several hours. No time to marinate? You can bake them right away and they’ll still be delicious!
- Preheat the oven to 425°F. Divide the chicken between two lined baking sheets, arranging the thighs in a single layer with a little space between each piece.
- Bake for 10 minutes, then flip each thigh. If using two oven racks, rotate the pans and switch their positions for more even cooking.
- Bake for another 10–15 minutes, or until the thickest part of the chicken reaches 175°F.
- Brush the chicken generously with another layer of BBQ sauce. Turn the oven to broil and broil for 3–5 minutes, or until the sauce is bubbling, sticky and caramelized around the edges. Keep a close eye on them because BBQ sauce can burn quickly under the broiler.
- Let the chicken rest for 5 minutes, then serve. Provecho!
Notes
For Meal Prep: Once cooled, portion the chicken into containers whole or sliced. It'll keep refrigerated for about 3–4 days.
