5 layer baked mediterranean dip
you are about to be transported to the mediterranean with this dish! each layer builds upon the next & oozes with flavor. from the homemade ultra creamy hummus, to the INCREDIBLE mesa de vida sauce, to the ooey gooey cheese spread, to the tangy veggies, & finish with simple mill's GF pita crackers. your taste buds aren't ready for what's about to hit them!
Ingredients
layer 1 - hummus
- 15 oz15 oz15 oz Chickpeas, rinsed & drained
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 2 Tbsp2 Tbsp2 Tbsp Tahini
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.5 tsp0.5 tsp0.5 tsp Cowboy Salt - Texas Salt Co., or seasoning of choice
- 2 Tbsp2 Tbsp2 Tbsp Water, or olive oil to thin
layer 2 - mediterranean meat
- 1.5 lb1.5 lb1.5 lb Tuna, Canned, may sub chicken, pork, or another protein of choice
- 1 cup1 cup1 cup Mediterranean Inspired Flavor Starter Sauce - Mesa de Vida
layer 3 - creamy cheese spread
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 2 - 3 oz2 - 3 oz2 - 3 oz Feta Cheese
- 2 - 3 oz2 - 3 oz2 - 3 oz Goat Cheese
- 1 pinch1 pinch1 pinch Salt and Pepper
- 2 Tbsp2 Tbsp2 Tbsp Water, to thin
layer 4 - roasted tomatoes
- 1 cup1 cup1 cup Tomato, Cherry, halved
layer 5 - veggie salad
- 1 cup1 cup1 cup English Cucumber, diced
- 0.25 cup0.25 cup0.25 cup Pepperoncini Peppers, diced
- 0.25 cup0.25 cup0.25 cup Roasted Red Pepper, diced
- 0.25 cup0.25 cup0.25 cup Kalamata Olives, diced
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Pepperoncini Juice
- 0.5 tsp0.5 tsp0.5 tsp Super Gyro Seasoning - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first make a batch of hummus by placing chickpeas in a saucepan with baking soda & cover with water.
- bring to a boil, then reduce to a simmer for 15-20 minutes (drain before proceeding to step 3).
- in a food processor combine remaining hummus ingredients.
- preheat oven to 400.
- choose a protein of choice, then mix with mesa de vida mediterranean sauce.
- to a food processor, add all creamy cheese spread ingredients & blend well.
- you can either assemble the dip into 6 individual glasses or a square baking dish
- follow this order to build your dip: hummus + mediterranean meat + creamy cheese spread + sprinkle tomatoes on top.
- place dip in the oven for 12-15 minutes or until tomatoes start to blister.
- while dip is baking, mix all veggie salad ingredients together.
- remove dip from oven & top with veggie salad.
- serve with pita crackers & enjoy.
