- In a Dutch oven or medium-sized saucepan, heat olive oil over medium heat
- Once hot, add chicken, onion, garlic, and seasonings
- Mix all together and cook over medium heat until chicken is no longer pink
- Add celery and parsnips and stir
- Add broth and bring to a simmer
- Cover and simmer on low for 15 mins
- Add pasta and peas and cover again for 10 mins
- Sprinkle fresh parsley on top
- Enjoy!
