This Apple Almond Chicken Salad is still one of my favorites and I have since created 10+ other chicken salads so you will never get bored with one flavor! Tzatziki Chicken Salad, Curry Chicken Salad, Buffalo Chicken Salad, Gyro Chicken Salad and Chicken Cherry Walnut Salad just to name a few! I make a big chicken salad every weekend and I meal prep lunches having it with some raw veggies on the side. It’s the perfect Whole30 lunch as it gives you your protein, veggies, fat and fruit all in one bowl! I love all the textures in this salad like crispy apples, chewy cranberries, tender chicken and crunchy almond slivers!

  1. Toss diced apples in lemon juice, set aside
  2. Combine mayonnaise in large bowl with all spice, mix well
  3. Add chicken, onion, celery and cranberries, tossing well
  4. Add apples and almonds, tossing gently with rubber spatula so almonds don’t crush
  5. Enjoy!
