Apple Almond Chicken Salad
This Apple Almond Chicken Salad is still one of my favorites and I have since created 10+ other chicken salads so you will never get bored with one flavor! Tzatziki Chicken Salad, Curry Chicken Salad, Buffalo Chicken Salad, Gyro Chicken Salad and Chicken Cherry Walnut Salad just to name a few! I make a big chicken salad every weekend and I meal prep lunches having it with some raw veggies on the side. It’s the perfect Whole30 lunch as it gives you your protein, veggies, fat and fruit all in one bowl! I love all the textures in this salad like crispy apples, chewy cranberries, tender chicken and crunchy almond slivers!
Ingredients
- 222 Skinless Chicken Breast, large, roasted and cubed
- 3 pieces3 pieces3 pieces Celery, diced (3 ribs)
- 0.5 cup0.5 cup0.5 cup Vidalia Onion, diced
- 1 whole1 whole1 whole Gala Apple, cored and diced
- 0.5 cup0.5 cup0.5 cup dried, unsweetened Cranberries
- 0.5 cup0.5 cup0.5 cup Slivered Almonds (Blanched), unsalted
- 2 tsp2 tsp2 tsp dried Thyme
- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 0.5 cup0.5 cup0.5 cup Avocado Oil Mayonnaise, more if needed
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Toss diced apples in lemon juice, set aside
- Combine mayonnaise in large bowl with all spice, mix well
- Add chicken, onion, celery and cranberries, tossing well
- Add apples and almonds, tossing gently with rubber spatula so almonds don’t crush
- Enjoy!
