Apple Pie Overnight Weetbix
If you love apple pie flavours, this one is such a good one to have on rotation. Creamy overnight weetbix layered with yoghurt and soft cinnamon apples that taste like apple pie in breakfast form. Perfect to prep the night before so you have something easy and delicious ready to go in the morning 🍎
Ingredients
For the base:
- 2 pieces2 pieces2 pieces Weetabix

- 0.333 cup0.333 cup0.333 cup Milk, any works fine!

For the apple layer:
- 100 grams100 grams100 grams Apple, Fuji, canned, sliced apples
- 1 tsp1 tsp1 tsp Cinnamon, Ground

For the yoghurt layer:
- 160 grams160 grams160 grams Plain Greek Yogurt, I used a vanilla flavour! (can also sub for plant-based / dairy free yoghurt)
For the caramel:
- 1 Tbsp1 Tbsp1 Tbsp Peanut Butter, runny works best

- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Crush the weetbix into a container or jar. Add the protein powder, give it a little stir around, and then add the milk, and give it another little mix. Press it down firmly with the back of a fork/spoon to create an even layer.
- Add the sliced apple to a small bowl with the cinnamon and lightly mash it until you have broken up the pieces into small chunks. Spoon evenly over the weetbix base.
- Spread the yoghurt evenly over the apple layer.
- To make the caramel, mix the peanut butter and maple syrup together until smooth, then pour over the top (if it is still not runny enough, add tiny bits of water until you reach your desired consistency). Spread evenly over the yoghurt layer. Top with extra apples if you wish!
- Place in the fridge overnight (or at least 15-20 mins) to set. Enjoy straight from the fridge the next morning and slay the day!!
