Avocado Tuna Poke Toast
Avocado toast is a simple, delicious meal all on its own. This protein-packed version adds the key elements of a Tuna Poke Bowl to the mix, which gives you the best of both worlds on a slice of toasted sourdough bread.

Ingredients
- 6 oz6 oz6 oz Yellowfin Tuna, sashimi grade
- 2 Tbsp2 Tbsp2 Tbsp Soy Sauce
- 1.5 tsp1.5 tsp1.5 tsp Rice Vinegar
- 1 tsp1 tsp1 tsp Sesame Oil
- .25 cup.25 cup.25 cup Green Onion (Scallion), sliced
- .25 tsp.25 tsp.25 tsp Sesame Seeds, plus more for garnish
- 1 pinch1 pinch1 pinch Red Pepper Flakes
- 222 Sourdough Bread, slices, toasted
- 111 Avocado
- .5.5.5 Lime, juiced
- .25 tsp.25 tsp.25 tsp Kosher Salt
- 3 Tbsp3 Tbsp3 Tbsp Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Sriracha
- 1 cup1 cup1 cup Microgreens, for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Thaw tuna according to package directions and cut into u00bd-inch cubes. Add cubed tuna to a medium bowl with 2 tablespoons soy sauce, 1.5 teaspoons rice vinegar, 1 teaspoon sesame oil, u00bc cup sliced green onion, u00bc teaspoon sesame seeds and a pinch of red pepper flakes. Refrigerate to marinate for 20 minutes.
- While poke is marinating, add avocado, juice of half a lime and .5 teaspoon salt to a small bowl. Mash until well combined and adjust salt, as needed.
- Make spicy mayonnaise by adding 3 tablespoons mayonnaise and 1 tablespoon sriracha to a small bowl and whisking until well incorporated.
- To make the dish, add a slice of toasted bread to a plate. Top with a layer of avocado spread. Spoon on marinated poke mixture. Drizzle with spicy mayonnaise. Sprinkle on extra sesame seeds and microgreens to garnish and serve.
