beef bulgogi bowl

- 1 whole1 whole1 whole Pear, Asian, grated
- 2 Tbsp2 Tbsp2 Tbsp White Miso Paste

- 0.25 cup0.25 cup0.25 cup Coconut Aminos
- 2 Tbsp2 Tbsp2 Tbsp Apple Cider Vinegar, may sub rice wine vinegar
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Ginger, Ground

- 1/4 tsp1/4 tsp1/4 tsp Salt and Pepper, to taste
- 1/2 tsp1/2 tsp1/2 tsp Gochugaru (Korean Chili Pepper Flakes), optional

sauce
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen

- 1/2 tsp1/2 tsp1/2 tsp Smoked Paprika
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1 pinch1 pinch1 pinch Salt and Pepper
for serving
- cilantro-lime cauliflower rice (click for recipe)
- kimchi coleslaw (click for recipe)
- English Cucumber, chopped
- Nori Seaweed

- Cilantro, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a skillet, brown ground meat.
- in a bowl, whisk together pear, miso, coconut aminos, vinegar, garlic, onion, & ginger.
- once meat is brown, add the sauce.
- let simmer for 5-6 minutes.
- while meat is cooking make cilantro-lime cauliflower rice.
- cook for ~8-10 minutes or until moisture starts to evaporate.
- mix in cilantro, lime juice, & salt.
- cook for another 5-6 minutes on low heat.
- to make sauce, whisk everything together in a bowl; refrigerate until ready to serve.
- to assemble bowl, add cilantro-lim cauliflower rice to a bowl, then layer on bulgogi meat, kimchi coleslaw, any other toppings you like, & drizzle on sauce.
