Ingredients

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add ground beef to a large bowl.
  2. Peel and quarter the onion, and peel the garlic, then add both to a food processor.
  3. Cut the ends off of the stems of parsley, cilantro, and mint, wash and dry, then add to the food processor (stems included—they have a lot of flavor!).
  4. It'll look like a lot of herbs, and the food processor will be very full. That's how it should be!
  5. Blend on high until a paste is formed, scraping down the sides as you go.
  6. Pour in the bowl with the ground beef, along with whatever liquid accumulates in the food processor.
  7. Add pistachios to the food processor and pulse until finely ground.
  8. Add ground pistachios to the bowl, along with the salt, pepper, coriander, and turmeric.
  9. Mix well to combine until herbs and seasonings are fully incorporated, but try to avoid overmixing.
  10. Form into patties, about 1/4 cup in size (or bigger or smaller, depending on preference).
  11. Preheat a pan on medium heat, then add olive oil. Add patties, push down slightly (this helps form a crust), and cook on either side until browned. You'll have to do this in batches so you don't crowd the pan.
  12. Set aside on a paper towel-lined plate until ready to serve.
  13. Garnish (if desired), serve with a generous squeeze of lime juice, devour.
