Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add ground beef to a large bowl.
- Peel and quarter the onion, and peel the garlic, then add both to a food processor.
- Cut the ends off of the stems of parsley, cilantro, and mint, wash and dry, then add to the food processor (stems included—they have a lot of flavor!).
- It'll look like a lot of herbs, and the food processor will be very full. That's how it should be!
- Blend on high until a paste is formed, scraping down the sides as you go.
- Pour in the bowl with the ground beef, along with whatever liquid accumulates in the food processor.
- Add pistachios to the food processor and pulse until finely ground.
- Add ground pistachios to the bowl, along with the salt, pepper, coriander, and turmeric.
- Mix well to combine until herbs and seasonings are fully incorporated, but try to avoid overmixing.
- Form into patties, about 1/4 cup in size (or bigger or smaller, depending on preference).
- Preheat a pan on medium heat, then add olive oil. Add patties, push down slightly (this helps form a crust), and cook on either side until browned. You'll have to do this in batches so you don't crowd the pan.
- Set aside on a paper towel-lined plate until ready to serve.
- Garnish (if desired), serve with a generous squeeze of lime juice, devour.
