Blueberry Cheesecake Frozen Bars
My no bake cottage cheese frozen bars are my most popular recipes on my page, and I was asked to come up with a cottage cheese recipe without using peanut butter so I bring you these glorious BLUEBERRY CHEESECAKE FROZEN BARS!
These are no bake, simple and few ingredients, and are a great treat to have in your freezer!
Ingredients
- 2 cup2 cup2 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Frozen Blueberries
- 0.5 cup0.5 cup0.5 cup Honey Cinnamon Sweet Thins - Simple Mills, or graham crackers, crushed
- 0.5 cup0.5 cup0.5 cup Organic Vegan White Baking Chips - Pascha Chocolate Co., melted
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend your cottage cheese and blueberries together (I use an immersion blender) until smooth.
- Add the melted chocolate and crushed sweet thins or graham crackers in a bowl and stir.
- Pour into a parchment lined 8x8 pan and freeze for 1.5-2 hours before cutting into squares.
- Store in freezer and let thaw for a few minutes before eating.
