There is too much goodness in these babies for words! A creamy, high protein cookie base has, with a smooth velvety caramel filling, topped with a salted chocolate layer. This is everything you could want in a dessert! Gluten, dairy, and refined sugar FREE
Ingredients
Cookie Dough Base
- .75 cup.75 cup.75 cup Cashew Butter

- .25 cup.25 cup.25 cup Coconut Oil, Melted
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- .33 cup.33 cup.33 cup Vanilla Protein Powder

- .25 cup.25 cup.25 cup Almond Flour

Caramel Layer
- 20 whole20 whole20 whole Medjool Dates, Pitted & soaked
- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

- .5 cup.5 cup.5 cup Almond Milk, Or maple
- .5 tsp.5 tsp.5 tsp Sea Salt

Chocolate
- .66 cup.66 cup.66 cup Semi-Sweet Chocolate Chips

- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
- 1 pinch1 pinch1 pinch Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine ingredients for cookie dough, then fold in chocolate chips
- Line an 8x8 pan with parchment paper and evenly press down cookie dough across bottom. Freeze while making caramel layer
- Soak your dates in hot water at least an hour to soften
- Process them with the remaining caramel ingredients until smooth
- Pour over cookie dough layer & freeze for 2-3 hours
- Melt chocolate and coconut oil, pour evenly over caramel, sprinkle with sea salt & freeze until chocolate hardens, just a few more minutes
- Cut into 16+ squares and enjoy!
- Can get messy as the caramel won't fully freeze, but still absolutely delicious!
