Peanut Butter Ritz Crackers
Just like your favorite lunchbox snack pack, these ritz crackers are buttery, crispy, and perfectly paired with a peanut butter filling. They're gluten free, with no questionable ingredients, and I’m sure your kids will love them as much as mine did!
Ingredients
- 1 cup1 cup1 cup Gluten Free Flour
- .5 Tbsp.5 Tbsp.5 Tbsp Baking Powder
- .5 tsp.5 tsp.5 tsp Cane Sugar
- .5 tsp.5 tsp.5 tsp Paprika
- .5 tsp.5 tsp.5 tsp Sea Salt
- 4 Tbsp4 Tbsp4 Tbsp Unsalted Butter, Cold
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- .25 cup.25 cup.25 cup Ice Water
- 1 Tbsp1 Tbsp1 Tbsp Unsalted Butter, melted
- .25 cup.25 cup.25 cup Creamy Peanut Butter
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Protein Powder, Or oat flour

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Whisk flour, baking powder, and spices in a bowl
- Grate butter into mixture, stirring every few grates
- Add oil and water (actual ice water, but ice doesn't count toward your 1/4 cup)
- Knead dough together
- Wrap in plastic wrap in disc shape and refrigerate 10-15min
- Dust surface with flour, place dough, dust more flour on top, and roll into a thin dough
- Use a 1 3/4 crinkle cookie cutter to cut cracker shapes
- Re-roll dough again and cut out shapes until all dough is used
- Place crackers on parchment paper lined baking sheet
- Use a fork or toothpick or poke holes in crackers
- Bake at 375 for 8-10 min until golden
- Brush with melted butter and sprinkle sea salt over finished crackers
- Mix drippy PB with protein powder or oat flour to thicken it slightly, place in a piping bag, and pipe onto half the cracker, topping to sandwich with remaining crackers
- Store in airtight container. After a day or two they might soften, so place in air fryer for 2-3ish min to crisp them back up before enjoying
