i can't think of a better way to start your morning than with these DIVINE protein waffles. as always, putting my healthy spin on a way to enjoy both cinnamon rolls & waffles for breakfast!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a large bowl, combine flour, psyllium husk, protein powder, sweetener, baking powder, cinnamon, & salt.
  2. in a separate bowl, whisk together greek yogurt, eggs, milk or water, & vanilla extract.
  3. add liquid ingredients to dry ingredients; mix together & add 1 tablespoon of water at a time until reaches desired consistency.
  4. allow batter to sit for 5-10 minutes to thicken - if too thick, add a couple more tablespoons of water.
  5. to a food processor, combine all caramel ingredients.
  6. slowly add a little water as needed to thin out a bit.
  7. pour ½ caramel into 6 silicon molds & allow to cool completely.
  8. when ready to make pancakes, add ~½ cup batter into waffle-iron & a mold of the caramel to the middle of the batter (make sure to completely cover with pancake batter).
  9. cook until waffles are crisp, ~3-4 minutes.
  10. in a food processor, combine all frosting ingredient.
  11. when serving, drizzle on top remaining caramel & frosting (option to add to piping bag or a small zip lock bag & drizzle on top of each waffle).
  12. serve with any other yummy toppings & sides - I like to add an omelet & raspberries!
