attention please! we have a HEALTHIER cheesecake factory dupe. 🍗🍄🧀✨ enter this chicken madeira bowl with juicy chicken, melty mozzarella, savory mushroom sauce, roasted asparagus, & creamy low-carb mashed veggies. basically all those cozy, saucy, cheesy chicken madeira vibes… but with more protein, more veggies, & a little less heaviness. 🤌 savory. saucy. cheesy. mushroom-y. herby. & SO ridiculously satisfying.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. heat a large skillet with a little avocado oil, then add chicken cutlets & cook for 4-5 minutes per side (or until cooked through).
  2. transfer chicken to a plate, then add mushrooms to skillet.
  3. saute mushrooms for 6-8 minutes or until soft.
  4. in a bowl, combine 1 cup broth, vinegar, coconut aminos, tamari, starch, & seasonings.
  5. pour into mushrooms → bring to a boil → reduce to a simmer & stir in remaining broth as it thickens up.
  6. simmer sauce for 15-20 minutes.
  7. preheat oven to 400.
  8. add asparagus to a sheet pan, then toss with a little oil + seasonings & roast for 20-25 minutes.
  9. with ~5 minutes left in baking time, add chicken to a sheet pan, then top with cheese.
  10. switch oven to broil & heat chicken for 3-5 minutes to melt cheese.
  11. make or use your favorite low-carb mashed veggies (like my potato/cauliflower mash OR hearts of palm mash).
  12. to build your bowl, start with your low-carb mashed veggies → chicken → mushroom sauce → roasted asparagus → parsley for garnishing & enjoy!

Notes

to easily cut chicken, place raw chicken breasts in the freezer for ~1 hour. this will help so it slices it easier into cutlets without being so messy.
