- 8 oz8 oz8 oz Baby Bella Mushrooms, sliced
- 111 Onion, diced
- 12-16 oz12-16 oz12-16 oz Peas and Carrots, Frozen
- 9 oz9 oz9 oz Hearts of Palm Spaghetti, 2 packages
- 1/2 lb1/2 lb1/2 lb oven-baked bacon (click for recipe), finely chopped
- 3/4-1 cup3/4-1 cup3/4-1 cup Parmesan Cheese

- 3/4-1 cup3/4-1 cup3/4-1 cup Mozzarella, plus extra for topping casserole
sauce
- 8 oz8 oz8 oz Cream Cheese, Light
- 1 cup1 cup1 cup Plain Greek Yogurt
- 1-2 cups1-2 cups1-2 cups Chicken Broth

- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Flour
- 2 Tbsp2 Tbsp2 Tbsp Amore [Italian] Seasoning - Primal Palate

- 1 tsp1 tsp1 tsp Salt and Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- in a bowl, toss chicken with salt & pepper.
- to a large skillet, sear diced chicken in a little fat, then transfer to a large bowl.
- add mushrooms, onions, peas, & carrots to skillet; cook until sauteed & moisture is evaporated.
- transfer veggies to bowl with chicken, then mix in hearts of palm noodles, bacon, & ~1.5 cups of cheese.
- prepare the sauce, by adding all ingredients to a sauce pan & whisking until smooth.
- simmer sauce until thickens, then pour into chicken & veggie mixture.
- add chicken mixture to a 9X13 casserole dish, then cover & bake for 15 minutes.
- remove casserole from oven, uncover, & add additional cheese on top.
- bake for another 10-15 minutes (or until chicken reaches internal temperature of 165), with option to broil for last 3-5 minutes.
