not sure why they call it million dollar spaghetti, but with this version you’ll be feeling like a million bucks. 🍝💰✨ this cozy, comforting casserole gets a lighter, protein-packed, fiber-boosted glow-up without sacrificing all the cheesy, saucy goodness you want from a classic. it layers low-carb spaghetti noodles, a veggie-loaded marinara + seasoned beef & pork meat sauce, a creamy cottage cheese + cream cheese mixture, & plenty of melty mozzarella + parmesan, all layered together & baked to perfection. cheesy. saucy. creamy. hearty. basically everything comfort food is made of, but with a little extra nutrition in every bite. 🤌

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. in a large skillet saute peppers, onions, & mushrooms.
  3. add meat to skillet & brown.
  4. add in marinara sauce & seasonings.
  5. mix well & let simmer for 10 minutes.
  6. while beef cooks, prepare noodles according to package directions (for palmini noodles - just rinse).
  7. in a bowl, combine softened cream cheese, cottage cheese (option to puree), & seasonings.
  8. place ½ spaghetti noodles to the bottom of a 9x13 pan.
  9. on top of noodles, layer ½ of the meat mixture, ½ of the cream cheese, & 1 cup of mozzarella/parmesan cheese mixture.
  10. repeat layers with remaining ingredients.
  11. bake for 20-25 minutes, with the option to broil for the last 3-4 minutes.
  12. option to top with more mozzarella or parmesan when serving.
