Wait, make that three things + a sweet friend...Alexandra of @thehangrylatina - a follow creator here on FoodSocial. We met at the Siete headquarters earlier this year and knew we had to collab on a recipe--each of us putting our own spin on the final product. Her PASSION FRUIT MEATBALL recipe uses frozen passion fruit vs mine, using fresh. S'good and perfect for game day, meal prepping or even snacking! Enjoy!!

  • .5 cup Passion Fruit, pulp from 4-5 fresh passion fruit, can sub frozen
  • 2 Tbsp Honey, omit for Whole30
  • 1 Tbsp Lime Juice
  • 1 Tbsp Water
  • 1 tsp Cornstarch, can thickener of choice
  • .125 tsp Redmond Real Salt, or to taste
  • 1 whole Lime, cut into wedges, optional for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large bowl combine the ground chicken, garlic, ginger, cilantro, green onions, lime juice and zest, Siete seasoning, coconut aminos, salt, baking soda and pepper until fully combined. Add egg and puff crumbs mixing again until egg is well incorporated and everything is mixed together.
  2. Line a small baking sheet with plastic then form meatballs. I get around 20 use a #60 cookie scoop (1⅜”) – it’s such a great size for cocktail meatballs. Place each meatball on the prepared baking sheet until all mixture is used. I like to roll each meatball in my hands to shape, this is optional as you can leave them in the scoop shape. Place the baking sheet in the refrigerator for 30 mins to set up.
  3. While the meatballs set up, prepare your air fryer basket as suggested by the manufacturer. I have a Cuisinart model, so I line the baking sheet with parchment then place the basket on top of that then spritz with avocado oil.
  4. When ready to cook, remove the baking sheet from the refrigerator and place on your meatballs on the prepared basket. Prepare your air fryer as directed by the manufacturer and bake at 400° for 10-12 minutes or until golden brown.
  5. While meatballs bake, combine passion fruit pulp, honey and lime juice in a small saucepan, bring to a slow simmer over medium heat, stirring occasionally.
  6. To thicken, stir cornstarch and water together til well combined in a small bowl. Reduce heat to low then add cornstarch mixture in a thin stream into the hot liquid while stirring, mixture should thicken–season with salt to taste.
  7. To serve, place meatballs on a serving platter of choice. Drizzle a bit of the glaze over the meatballs, placing the rest in a small bowl to serve along with lime wedges as desired.
  8. Enjoy right away and store any leftovers in the fridge for up to a week.

Notes

To bake in your oven, preheat to 400° - then bake meatballs until golden brown, typically around 18-22 minutes depending on the size. Get that internal temp to 165° and you should be good to go!
