Ingredients
- 1 lb1 lb1 lb Boneless Skinless Chicken Breasts, diced (or chicken thighs)
- 1 cup1 cup1 cup Bell Pepper, diced (see notes)
- 1 cup1 cup1 cup Onion, diced (see notes)
- 8.5 oz8.5 oz8.5 oz Latin Inspired Flavor Starter Sauce - Mesa de Vida, (1 bottle)
- Salt, to taste/health needs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a skillet, sear chicken to golden brown over medium high-heat.
- Add remaining ingredients. Bring to a simmer, cover, lower the heat to low & cook for 25 minutes, or until chicken is fully cooked. Add a bit of broth or water if necessary.
- Serve over rice, pasta, couscous, quinoa, mashed potatoes, or with your favorite bread or tortillas on the side.
