Whole30 Chinese Chicken Salad
Looking for a salad full of crunch and flavor? This Chinese Chicken Salad is bursting with delicious flavors and texture. It is ready in no time with simple ingredients. Broccoli slaw, carrot sticks, water chestnuts and almonds for crunch topped with the most delicious chicken. It's topped off with my Sesame Ginger Dressing for the perfect salad!
Ingredients
- 1 lb1 lb1 lb Boneless Skinless Chicken Breasts, cubed in bite size pieces
- 2 Tbsp2 Tbsp2 Tbsp Sesame Oil, divided
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp ground Ginger
- 3 Tbsp3 Tbsp3 Tbsp Coconut Aminos
- 1 whole1 whole1 whole Lime, juiced
- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Powder
- 12 oz12 oz12 oz Broccoli Slaw
- 1 cup1 cup1 cup Carrot Sticks
- 8 oz8 oz8 oz Water Chestnuts, sliced & drained
- 11 oz11 oz11 oz Tangerines (Mandarin Orange), unsweetened & drained
- 0.5 cup0.5 cup0.5 cup Slivered Almonds (Blanched)
- 4 pieces4 pieces4 pieces Green Onion (Scallion), sliced on bias
- 1 whole1 whole1 whole Lime, sliced for garnish
- 1 Tbsp1 Tbsp1 Tbsp Sesame Seeds, for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Marinate chicken in first 5 ingredients, set aside
- Add to a large bowl, broccoli slaw, carrots, water chestnuts, almonds, mandarins & onions
- Toss well
- Heat oil in pan
- Add arrowroot to chicken & toss well
- Cook chicken 2-3 minutes per side, depending on how large the bites are
- Add to chicken to salad
- Add dressing
- Garnish with limes & sesame seeds
