Loaded Cauliflower Salad
This Loaded Cauliflower Salad is bursting with flavor and texture! It has eggs, green onions, bacon and the most delicious creamy dijon dressing! Did I mention theres bacon! It has been known around here as the faux potato salad and there are never any leftovers! It is perfect with any kind of protein and we especially love it with grilled barbecue chicken or steak!
Ingredients
- 1 head1 head 1 headCauliflower, large & cut into florets
- 3 Tbsp3 Tbsp 3 TbspExtra Virgin Olive Oil
- 4 whole4 whole 4 wholeEggs, hard boiled, halved and each half 1/4rd
- 8 pieces8 pieces 8 piecesBacon, crispy and chopped
- 3 whole3 whole 3 wholeGreen Onion (Scallion), sliced thin, reserving some green slices for garnish
- 0.25 cup0.25 cup 0.25 cupNutritional Yeast
- 0.5 tsp0.5 tsp 0.5 tspSalt
- 0.5 tsp0.5 tsp 0.5 tspBlack Pepper
- 1 Tbsp1 Tbsp 1 TbspDijon Mustard
- 0.5 cup0.5 cup 0.5 cupAvocado Oil Mayonnaise
- 0.5 whole0.5 whole 0.5 wholeLemon, juiced
- 0.5 tsp0.5 tsp 0.5 tspGarlic Powder
- 0.5 tsp0.5 tsp 0.5 tspSmoked Paprika
- 1 tsp1 tsp 1 tspSalt
- 0.5 tsp0.5 tsp 0.5 tspBlack Pepper

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400 degrees
- Toss cauliflower with oil, salt and pepper
- Put on parchment lined baking sheet and roast 25 minutes, tossing half way through
- Meanwhile, whisk dressing ingredients in a small bowl
- Remove cauliflower, let cool and put in a large bowl
- Add eggs, bacon, nutritional yeast and onions
- Pour dressing over salad and toss gently to coat
- Garnish with green onion slices
- Enjoy!
