Chinese-Inspired Steamed Eggs (Edit recipe)

These custard-like eggs are so easy to make and are absolutely delicious. The cloud-like texture makes them so fun to eat, and it's a great way to mix up the usual way you enjoy your eggs! Flavorful, satisfying, luscious, and somehow light too.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Whisk eggs with water, salt, and seasonings until completely combined and smooth.
  2. Spray or rub the inside of a ramekin with oil, then pour the egg mixture in and cover with Saran Wrap.
  3. Add enough water to a large pot with a steamer basket to come just below the basket, and turn heat to high.
  4. When the water comes to a boil, turn it to medium-low and put the ramekin in the steamer basket, then cover the pot with a lid.
  5. Steam for 9-12 minutes, depending in the size/depth of your ramekin (deeper ramekin would be closer to 12 minutes). Sides should be set and inside should be jiggly but set.
  6. Pour coconut aminos and sesame oil on top. Use a butter knife to slice across the eggs both ways, so you have a checkered pattern (see photo for reference).
  7. Tilt the ramekin so the coconut aminos and sesame oil penetrate all those little cracks you just sliced.
  8. Top with green onions, sesame seeds, flaky salt, and/or whatever else you want to top with.
  9. Enjoy!!
