Chipotle Queso Chili Dogs
While I absolutely love a scratch made chili, 2 hours of simmering in this heat? Quick and easy is on the menu here. Plant-based dogs, Sprague chili, smoky chipotle queso, red onions, and spicy jalapenos to finish. Satisfyingly delicious and so quick and simple.
Ingredients
- 4 whole4 whole4 whole Hot Dog Buns, Larger buns / rolls

- 4 whole4 whole4 whole Jumbo Veggie Dogs, I used Lightlife
- 1 whole1 whole1 whole Extra Virgin Olive Oil
- 425 grams425 grams425 grams Plant-Based Chili - Sprague Canning
- 1 whole1 whole1 whole Chipotle Queso - Casa Bonita
- 0.5 whole0.5 whole0.5 whole Red Onion, small onion, diced
- 2 whole2 whole2 whole Jalapeño Pepper, sliced for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Empty your chili into a small, covered pot set to medium low and heat until warmed thoroughly. Switch to low once hot and steamy.
- Add about half the queso to a small covered pot set to medium low. Once heated and bubbly, reduce the heat to low and leave covered until service.
- I used a non-stick skillet for this recipe. Fill with enough water to coat your hot dogs and bring the water to a boil. Once boiled, add the dogs and boil them for a few minutes until malleable and warmed through entirely. Strain the water carefully and return the skillet to the burner now set to just below medium. Add a splash of EVOO and start frying the dogs until blistered / browned. Keep rotating them using tongs to get them blistered on all sides.
- Once the dogs are ready, transfer them to your buns and smother each one with a ladle full of hot chili. Next, spoon over some hot chipotle queso. Finish with a sprinkling of diced red onion and some jalapeno slices. ENJOY!
Notes
- The package of dogs comes with 5. You could stretch out the chili to 5 dogs if needed, but I'd recommend switching to smaller buns in that case so you're not left with empty looking chili dogs.
