  1. Begin by combining cottage cheese and maple syrup in a food processor. Blend until smooth
  2. Dip strawberries one by one in creamy cottage cheese mixture, keeping the stem clean
  3. Place on parchment lined baking sheet, and freeze for 1-2 hours or until just set (it's ok if it's not completely frozen)
  4. Combine chocolate chips and coconut oil in a microwave-safe bowl
  5. Microwave for 30-second increments, stirring to distribute heat and melt chips
  6. Once completely smooth, dip cottage cheese strawberries into a layer of the chocolate
  7. Place back on parchment lined baking sheet and set in freezer for 30 minutes or until set
  8. Enjoy!
