Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chop 1/2 cup strawberries and set aside.
- Add the remaining 2 cups strawberries to a high powered blender along with oats, protein powder, chia seeds, soy milk, yogurt, maple syrup, and vanilla. Blend until completely smooth, 1-2 minutes.
- Add the chopped strawberries to the bottom of your serving jars or bowls, then pour the oats mixture on top. Alternatively, stir the chopped strawberries into the oats mixture and then pour into your serving jars or bowls.
- Refrigerate overnight or at least 4 hours to thicken before making the ganache.
- For the ganache, add chocolate chips to a small bowl. Heat in the microwave in 30 second intervals, stirring in between, until melted and smooth. Add in soy milk and stir until smooth.
- Pour and spread the melted chocolate mixture over the overnight oats. Place in the freezer for about 15 minutes to set.
- Add more toppings if desired, like extra strawberries or granola for crunch, and enjoy!
Notes
Store covered in the fridge for up to 5 days. If you want a hard chocolate shell instead of a smooth ganache, replace the soy milk in the chocolate topping with 1/2 tsp coconut oil and melt with the chocolate.
