Cosmic Brownie Overnight Oats
These Cosmic Brownie inspired overnight oats are a healthier twist on a nostalgic treat! They taste similar to brownie batter and are topped with a rich dark chocolate ganache and the classic candy coated chocolate chips! (I used THESE dairy-free and dye-free ones). This makes for a delicious high protein breakfast or dessert that takes just minutes to prep. If Cosmic Brownies were one of your childhood favorites, then you will love these overnight oats!
Ingredients
- 1 cup1 cup1 cup Rolled Oats
- 1.25 cups1.25 cups1.25 cups Soy Milk, or non-dairy milk of choice
- 2 Tbsp2 Tbsp2 Tbsp Chocolate Protein Powder, I used EarthChimp
- 2 Tbsp2 Tbsp2 Tbsp Cocoa Powder
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter, or nut butter of choice
- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup, or sweetener of choice
- 1 Tbsp1 Tbsp1 Tbsp Chia Seeds
- 1 tsp1 tsp1 tsp Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Salt
- 0.25 cup0.25 cup0.25 cup Dark Chocolate Chips
- 2 Tbsp2 Tbsp2 Tbsp Soy Milk, or non-dairy milk of choice
- 1 Tbsp1 Tbsp1 Tbsp Rainbow Sprinkles, see link above for the cosmic brownie sprinkles I used

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients in a medium bowl and stir until well combined. Divide into two jars or small bowls and refrigerate overnight or at least 4 hours.
- Melt chocolate chips and mix thoroughly with soy milk until smooth. Spread on top of oats layer and add sprinkles. Place in freezer for 10 minutes or until ganache is set. Enjoy!
Notes
Refrigerate for up to 5 days.
