These Cosmic Brownie inspired overnight oats are a healthier twist on a nostalgic treat! They taste similar to brownie batter and are topped with a rich dark chocolate ganache and the classic candy coated chocolate chips! (I used THESE dairy-free and dye-free ones).   1. Combine all ingredients in a medium bowl and stir until well combined. Divide into two jars or small bowls and refrigerate overnight or at least 4 hours.
  2. Melt chocolate chips and mix thoroughly with soy milk until smooth. Spread on top of oats layer and add sprinkles. Place in freezer for 10 minutes or until ganache is set. Enjoy!
