chocolate covered strawberry granola bark
you are "barking" up the right tree with this delicious recipe. granola + chocolate covered strawberries = YUM!
Ingredients
- 2 cup2 cup2 cup One Degree Organic Oats
- 0.5 cup0.5 cup0.5 cup Chia Seeds, ground
- 0.5 cup0.5 cup0.5 cup Pumpkin Seeds, or any nut/seed
- 0.25 cup0.25 cup0.25 cup Coconut Oil, or butter
- 2 Tbsp2 Tbsp2 Tbsp Unsweetened Cashew Butter
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup, or honey
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 cup1 cup1 cup Sugar-free Dark Chocolate Chips
- 1 oz1 oz1 oz Freeze Dried Strawberries
- 111 Redmond Real Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 325°F.
- in a bowl, combine oats, nuts/seeds, & sea salt.
- in a sauce pan over medium heat, melt butter or oil.
- remove from heat, then add nut butter, honey/maple syrup, granulated sweetener, & vanilla extract to melted butter or oil.
- using a large spatula, thoroughly mix wet ingredients into dry ingredients.
- add granola to a quarter-sheet baking sheet.
- bake for 10 minutes, then take it out and mix thoroughly.
- press down mixture very firmly, then bake for an additional 15 minutes.
- once the granola is done baking, press firmly again. allow it to cool completely.
- melt chocolate chips, then add a thin layer on top of cooled granola.
- add freeze dried strawberries & sprinkle sea salt on top.
- put in the freezer for at least 30 minutes before breaking into pieces.
- i like to store my bark in the freezer.
