Cilantro Lime Cauliflower Rice

- 16 oz16 oz16 oz Cauliflower, riced. About 4 cups or 1 medium head
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted

- .5 tsp.5 tsp.5 tsp Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

- .5 tsp.5 tsp.5 tsp Chipotle Powder, optional

- 3 Tbsp3 Tbsp3 Tbsp Cilantro, chopped
- 2 Tbsp2 Tbsp2 Tbsp Lime Juice
- Salt and Pepper, additional to taste

- In a large skillet over medium heat, melt the butter until it begins to froth. Add the cauliflower rice and toss to coat in the butter.
- Sprinkle with salt and pepper, and a little chipotle powder, if desired. Cook, stirring frequently, until tender crisp and just beginning to brown, about 5 minutes.
- Remove from heat and add chopped cilantro, lime juice and any additional salt and pepper to taste.
