Candied Pumpkin Seeds

- To prepare:
- Date Caramel
- 1. Soak dates in hot water for 10 minutes then drain.
- 2. Blend dates, warm liquid, vanilla, and salt in a high-speed blender until smooth.
- Honey-Candied Pepitas
- 1. Add pumpkin seeds, 1½ tablespoons honey, a pinch of salt, and a dash of apple pie seasoning.
- 2. Transfer immediately to parchment paper, spread out, and bake at 350 until golden.
- 4. Batter & Apple Prep
- 1. Whisk dry ingredients (Primal Palette flour, baking powder, sea salt, apple pie seasoning) in a bowl.
- 2. Whisk wet ingredients (egg, 1 tbsp honey, ¾ cup cider) in a separate measuring cup.
- 3. Whisk wet into dry.
- 4. Slice apples into ⅓-inch rings, remove center cores, and pat dry with paper towels.
- Pan Fry
- 1. Heat 2–3 tablespoons oil in a skillet over medium heat.
- 2. Dip apple rings into batter, let excess drip off, and lay into the hot pan.
- 3. Fry for 2–3 minutes per side until golden brown.
- 4. Transfer to a wire rack.
- Plating
- 1. Dredge apples in cinnamon sugar mix.
- 2. Drizzle with caramel.
- 3. Top with pepitas.
