Stuffed Grape Leaf Soup
Think Italian Wedding Soup meets Mediterranean comfort food.
I deconstructed traditional stuffed grape leaves (Dolmas) into a rich, cozy bowl of soup, and honestly? I might never roll a grape leaf again.
The base is a slow-simmered, nutrient-dense bone broth made with a beef patella bone and us wellness meats bone broth mix. Floating in that liquid gold are tender lamb & rice meatballs seasoned with true made foods dry rub, garlic, mint, and warm allspice, plus fresh chopped grape leaves and plenty of bright lemon. It’s warm, herbaceous, savory, and perfectly tangy.
Ingredients
Broth
- 20 cups20 cups20 cups Hot Water
- 1 whole1 whole1 whole Beef Patella Femur Bone - US Wellness Meats

- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 2 whole2 whole2 whole US Wellness Meats Bone Broth Seasoning, packets
Lamb Meatballs
- 1 lb1 lb1 lb Ground Lamb - US Wellness Meats

- 1.5 cups1.5 cups1.5 cups Rice, Jasmine, cooked

- 1 Tbsp1 Tbsp1 Tbsp Mint Leaves, minced
- 2 Tbsp2 Tbsp2 Tbsp Garlic, minced

- 1 Tbsp1 Tbsp1 Tbsp All Rub All Purpose Seasoning - True Made Foods

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Allspice, Ground
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil, for searing meatballs

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Broth:
- -Add all broth ingredients to a large pot and cook on medium heat for 2-3 hours
- - allow to cool and strain fat from top.
- - remove bone and add lemon juice
- Meatballs:
- - add meatball ingredients to a bowl and combine.
- - roll into 1 inch balls.
- - add to a pan on medium high heat and cook until brown on both sides.
- - add to broth.
- Leaves:
- - chop leaves and add to soup.
- cook for 1 hour on low heat- serve & enjoy!
Notes
The longer the cook time the better for the bone broth!
