Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook the farro: Cook farro according to package instructions.
- Prepare the “chicken”: While the farro cooks, prepare the soy curl chicken recipe, or cook your vegan chicken of choice according to package instructions. If using, stir in the za’atar seasoning at the end of cooking.
- Make the dressing: In a small bowl, combine all dressing ingredients, starting with 1 tablespoon of water. Whisk until smooth. If needed, add water 1 teaspoon at a time until you reach your desired consistency.
- Assemble: Divide the cooked farro, soy curl chicken, arugula, cucumber, tomatoes, roasted red peppers, and dairy-free feta between four bowls. Drizzle with the tahini dressing and finish with fresh parsley or an extra sprinkle of za’atar, if desired.
Notes
- Tahini: For the best results, use smooth, runny tahini rather than the dry, stiff tahini that you might find at the bottom of the jar. This makes the dressing easier to mix and gives it a creamier consistency.
- Roasted red peppers: Jarred roasted red peppers are the easiest option for this recipe. You can also use homemade roasted red peppers.
- Storage: Store the cooked farro, soy curl chicken, chopped vegetables, and tahini dressing in separate airtight containers in the fridge for up to 4 days. Assemble the bowls just before serving for the best texture. The dressing will thicken slightly in the fridge, so stir in a little water or lemon juice to loosen it before serving.
- Total time: The total time is about 30 minutes. The farro and soy curl chicken cook at the same time, while you prepare the dressing and vegetables, so the prep and cook times overlap.
