Cookie Dough Overnight Weetbix
somewhere along the way, people started acting like “balanced” meant plain, sad, joyless food…
and i simply do not agree
as a dietitian, one thing i really care about teaching on here is that balance can look fun, it can look delicious, and it can look like cookie dough overnight weetbix !!!

Ingredients
For the base:
- 2 pieces2 pieces2 pieces Weetabix
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Pancake Batter Plant Protein - Naked Harvest, use code CHENOA to save my shayla xx

- 100 ml100 ml100 ml Milk, any works fine!

For the yoghurt layer:
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt, or ~150-160g
- 1 Tbsp1 Tbsp1 Tbsp Peanut Butter

- 1 tsp1 tsp1 tsp Pure Maple Syrup

- 1 Tbsp1 Tbsp1 Tbsp Dark Chocolate Chips, can also use chopped chocolate too!!

Toppings
- 1 Tbsp1 Tbsp1 Tbsp Dark Chocolate Chips

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Crush weetbix into a bowl/container. Add in the milk and protein powder, mix until well combined, then flatten down with the back of a fork/spoon.
- In a separate bowl, whisk together the yoghurt, peanut butter and maple syrup until smooth.
- Add in the chocolate chips and fold through. Spread over the weetbix base.
- Top with more dark chocolate chips, place in the fridge overnight and enjoy!
Notes
Feel free to add a layer of fruit for extra fibre! E.g. sliced banana, mashed raspberries, sliced strawberries etc. enjoyyyyy xx
