Cookie Monster Cookie Dough Brownies
No bake, gluten, diary, and dye free, with a boost of protein, too! With a fudgey brownie base, melt in your mouth cookie dough center, and an easy homemade frosting, naturally colored with blue spirulina
Ingredients
Brownie base
- 8 whole8 whole8 whole Medjool Dates, Soft or soaked
- 0.5 cup0.5 cup0.5 cup Almond Flour
- .33 cup.33 cup.33 cup Raw Cacao Powder
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
Cookie dough
- 0.75 cup0.75 cup0.75 cup Cashew Butter
- .5 cup.5 cup.5 cup Vanilla Protein Powder
- .25 cup.25 cup.25 cup Almond Flour
- .25 cup.25 cup.25 cup Coconut Oil, Melted
- .25 cup.25 cup.25 cup Pure Maple Syrup
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- .33 cup.33 cup.33 cup Dark Chocolate Chips
Frosting
- 4 Tbsp4 Tbsp4 Tbsp Unsalted Butter
- 0.75 cup0.75 cup0.75 cup Powdered Monkfruit Sweetener - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Almond Milk
- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract
- .5 tsp.5 tsp.5 tsp Spirulina Powder, Blue

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- If your dates aren't very soft then soak them in hot water for 20min + to help soften them before trying to process
- Process brownie ingredients together, then press down into 9x5 loaf pan lined with parchment paper
- Mix together cookie dough ingredients, and fold in chocolate chips
- Press overtop brownie layer and place in the freezer 30min +
- Press frosting overtop cookie dough layer, place homemade candy eyes and crushed cookies
- Place in the fridge 30min+ or until frosting is firm enough to cut through
- Slice and enjoy!
