Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Pre-heat the oven to 400°F.
  2. Warm 3 tbsp of the olive oil in a large skillet on medium heat then add the diced potatoes. Let them cook 3 minutes stirring occasionally.
  3. Add the red and green peppers and stir to combine. Add additional olive oil to the pan if needed and cook until the peppers and potatoes are just about fork tender.
  4. Add the shallots and sauté for a minute then add the corned beef and stir to combine.
  5. Cook for 5 more minutes until the vegetables are tender and slightly charred, and the corned beef is warmed.
  6. Taste and add salt and pepper as needed.
  7. Sprinkle the top with shredded cheddar cheese and place in the oven for 5 minutes or until the cheese is melted.
  8. Serve with a fried egg on top if desired.

Notes

Add more olive oil as needed to the pan. Adjust salt and pepper to your preference.
