Cozy Thai Curry Coconut Chicken Soup
This soup is cozy and simple, and you can add so many other things to make it even cozier!
Ingredients
- 2 lb2 lb2 lb Whole Chicken Leg
- 1 whole1 whole1 whole Red Onion, Diced
- 1 whole1 whole1 whole Yellow Bell Pepper, Diced
- 2 Tbsp2 Tbsp2 Tbsp Red Curry Paste
- 1 cup1 cup1 cup Lentils, Dried
- 1 cup1 cup1 cup Coconut Milk
- 1 cup1 cup1 cup Basmati Rice

- 2 tsp2 tsp2 tsp Salt

- 1 Tbsp1 Tbsp1 Tbsp Bacon Grease, Or Olive Oil
- 1 whole1 whole1 whole Sweet Potato
- 4 whole4 whole4 whole Carrots
- 2 whole2 whole2 whole Potatoes, Russet
- 4 whole4 whole4 whole Parsnip

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sprinkle salt and pepper over chicken legs
- Heat a medium-sized Dutch oven or pan over medium heat
- Once hot, add chicken
- Let cook until brown on the bottom, then flip and cook until the other side is nice and brown
- Fill the Dutch oven with enough water to cover the chicken. It should be about 1-11/2 inches from the top
- Bring to a simmer, cover, turn to low, and simmer for 3 hours
- Remove chicken from broth and set aside to cool
- Pour broth into a bowl
- Add bacon grease or other oil to pan
- Once hot, add onion and bell peppers and cook until soft
- Add curry paste and mix
- Add the broth back in, along with the coconut milk, salt, and lentils
- Chicken should be cool enough now to separate the meat from the bone and skin
- Once separated, add chicken back into the pan and stir
- Cover and simmer for 30 mins
- Uncover and add rice in and stir
- Cover and simmer again for 15 mins
- Top with cilantro and plain Greek yogurt
- Enjoy!!
