Homemade Beets
Those vacuum-sealed beets might be "convenient," but they're sitting in plastic for who knows how long... and that's not exactly the vibe when you're trying to eat clean.
Ingredients
- 6 - 8 whole6 - 8 whole6 - 8 whole Beets
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Wash and cut the tops and bottoms off the beets
- Cover beets with water in a medium-sized saucepan
- Bring to a boil
- Reduce the heat, cover, and simmer until you can easily insert a fork into the middle
- Remove with a slotted spoon and place in an ice bath
- Once cooled, remove the skin by just rubbing it with your fingers
- Cut up and store in the refrigerator
- Enjoy!
