There’s something about ceviche that instantly feels like summer. Maybe it’s the bright citrus, the fresh herbs, or the fact that it’s served cold on a hot day, but it’s one of my favorite dishes to make when the weather warms up.

  1. In a bowl, combine the lime juice, lemon juice, honey, olive oil, salt, and pepper.
  2. Add the chopped octopus and let it marinate in the fridge for about 15–20 minutes so it absorbs the citrus flavor.
  3. Fold in the cucumber, tomato, red onion, cilantro, and jalapeño.
  4. Gently mix in the avocado right before serving so it stays creamy and intact.
  5. Taste and adjust... add more lime for brightness or a little more sweetener if you want balance.
