  1. Preheat the oven to 350° and prep a large oven-safe baking dish.
  2. Rip the croissants into large chunks and place into a casserole dish.
  3. Whisk together the eggs, milk, vanilla, and cinnamon well. Pour over the top of the croissants, making sure to coat each piece.
  4. Top with a little brown sugar and bake for 30 minutes at 350°.
